Kid-Friendly Recipe: HDMPC
When the pantry’s low and you need a kid-friendly meal fast, here’s a surefire recipe that can get you by for a night, direct from a kid chef. It may not be the healthiest option, but it is surprisingly tasty (even a hot dog hater like me enjoys this meal once in a great while!). So here we go: HDMPC, aka hot-dogs-mashed-potatoes-and-cheese.
Ingredients:
- 1 package of hot dogs (I like lower fat options like turkey dogs)
- Mashed potatoes
- American cheese
Preheat oven to 350 degrees Farenhneit. While the oven is preheating, make 8 to 12 servings of mashed potatoes. Both traditional mashed potatoes and instant mashed work well in this recipe.
Slice each hot dog lengthwise down the middle and place each butterflied dog on a cookie sheet. Scoop out about two servings of prepared mashed potatoes onto each hot dog. Top the potatoes with either ½ or 1 slice of American cheese, depending on your preference.
Bake in the oven for 20 to 30 minutes, or until the cheese is browned and bubbly.
Serve with the vegetable of your choice.

Crystal, when my husband told me about this recipe (which he made up when he was 12 and on his own for dinner with few groceries at home), I thought "Ew!" too. I even said that it sounded disgusting. So he made it for himself, and I tried a bite. Verdict: surprisingly good!
